1- Download required iOS5 .IPSW Files
2- Connect your iPhone or iPod on computer (Windows or Mac)
3- Lets iTunes runs (or open it), then click on on [Check for Update] button while pressing the [Shift] key (for Windows) or [Option] key (for Mac OS X).
4- Browse and select your downloaded IPSW file
5- Wait until iOS5 is installed, once done you’ll see a new setup activation screen.
6- On the setup screen, triple click the Home button (3 times) to activate VoiceOver.
7- Triple click on the home button again and the Emergency Call screen will appear. And, while it’s switching, swipe down the screen with three fingers gesture to open Notifications Center.
8- Tap on the Weather widget on the Notifications Center to load Weather app (Tap twice on the Y (Yahoo! logo) if it doesn’t load.
9- Click on Home button to exit to iPhone Springboard.
10- Now you are on iOS 5 already. You may also disable VoiceOver if VoiceOver is still enabled.
